Recipe of the Month - Stuffed Spaghetti Squash

Stuffed Spaghetti Squash
  • 1 spaghetti squash, cut in half, seeds removed
  • Non-stick spray
  • 2 cups broccoli florets
  • 3 cloves minced garlic
  • 1 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1 green pepper, seeded and diced
  • 1/2 cup part-skim mozzarella
  • 1/3 cup shredded Parmesan
Place squash halves in microwave safe dish with 1/4 cup water on the bottom and cook for 9-11 minutes. In pan, sautee broccoli, red pepper flakes and garlic for 3-5 minutes. Scrape out the spaghetti of the squash with a fork and add it to the broccoli mixture. Add Parmesan cheese, Italian seasoning and pepper. Distribute mixture back into squash shells, top with mozzarella and broil until brown.
