Recipe of the Month - Grilled Veggie Kebobs

Grilled Veggie Kebobs
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves minced garlic
  • 1 tablespoon Italian seasoning
  • 16 cherry tomatoes
  • 12 mushrooms
  • 1/2 red onion cut into chunks
  • 1 zucchini cut into slices
Whisk oil, vinegar, garlic and seasoning in a largee bowl. Add vegetables, toss to coat and marinate in the refrigerator for at least an hour. Thread onto skewers and grill, turning oncee, until tendeer, 12-15 minutes.
